Method
1. Make the potato cakes
- Step 1
Boil potatoes (225 g) in salted water until fork-tender. Drain well.
- Step 2
Mash with butter (20 g) until smooth (or use a potato (225 g) ricer).
- Step 3
Mix in flour (50 g), chopped spring onions (2 onions), salt, and white pepper.
- Step 4
Knead on a floured surface for 2-3 minutes until smooth.
- Step 5
Roll out to about 1.5 cm thick and cut into rounds (4-5 cakes).
- Step 6
Cook in a dry pan (or lightly oiled/buttered pan) for 2-3 minutes each side until golden. Set aside.
2. Cook the bacon
- Step 1
In the same pan, fry bacon (4 bacon) slowly until crisp. Remove and keep warm.
3. Prepare the avocado
- Step 1
Halve, stone, and peel the avocado (1 avocado). Slice thinly, then fan out.
4. Poach the eggs
- Step 1
Bring a deep pan of water to a boil, then reduce to a gentle simmer.
- Step 2
Add a splash of vinegar (1 tbsp) (optional, helps whites set).
- Step 3
Crack eggs (2 eggs) into ramekins, then gently slide them into the water.
- Step 4
Cook for 3 minutes for runny yolks. Remove and drain on kitchen paper.
5. Assemble the dish
- Step 1
Warm the potato (225 g) cakes briefly in the bacon (4 bacon) pan to absorb the flavour.
- Step 2
Stack: potato (225 g) cake avocado (1 avocado) slices another potato cake avocado bacon (4 bacon) rashers poached egg (2 eggs).
- Step 3
Season with sea salt, garnish with spring onion (2 onions) greens, and sprinkle with chilli flakes if desired.
