Method

  1. Step 1

    Peel the potatoes (1 kg) and cut them into equal-sized pieces. I recommend cutting them in half or quarters but try to make them all a similar size.

  2. Step 2

    Place the potatoes (1 kg) in a saucepan, add the salt (1 tsp) and bicarbonate, and top it up with cold water until the potatoes are covered. Place over high heat and bring to a boil. Once boiling, turn it down to low and simmer for 20 to 25 minutes until the potatoes are completely cooked through.

  3. Step 3

    Gently remove them from the water and place them onto a cooling rack.

  4. Step 4

    Place the goose/duck (100 g) fat onto a baking tray and into a preheated oven at 180°C Fan for 10 minutes. Once hot, place the potatoes (1 kg) into the fat and roll them around. Place back into the oven for a total cooking time of 45 minutes, turning them around every 15 minutes - two turns in total.

  5. Step 5

    To make the Rosemary (7 g) and Thyme (5 g) Sea Salt (10 g). Add the ingredients into a mortar and pestle and grind them together until the herbs break down and you have a bright green fine sea salt mixture.

  6. Step 6

    Remove the potatoes (1 kg) from the oven and season them with the rosemary (7 g) and thyme (5 g) salt (1 tsp).
