Method

  1. Step 1

Cut the tomatoes (4 tomatoes) into quarters, remove the seeds, and cut the flesh into small dice. Finley dice the red and place them both into a bowl.

  2. Step 2

Peel and finely dice or grate 1 clove of garlic (2 garlic) and simply cut the other one in halt and set to the side. Add the garlic to the tomato (4 tomatoes) mix along with the extra virgin olive oil (80 ml) and a pinch of salt and pepper. Mix everything together.

  3. Step 3

Cut two large slices of bread (2 bread) and place a frying pan or griddle pan over medium heat. Toast the bread on each side in a dry pan. While the toast is still hot, rub it with the garlic (2 garlic) you cut in half earlier.

  4. Step 4

To serve, pile the tomato (4 tomatoes) mixture on top of the garlic (2 garlic) toast and garnish with fresh basil leaves and a drizzle of extra virgin olive oil (80 ml).

Questions people ask

How many does it serve, and can I change that?

As written it serves 4. Use the scale control on the recipe card to change it: every quantity in the ingredients and inside the method steps updates with it. Seasoning, and anything measured in pinches or splashes, is deliberately left alone.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.

Is it vegan?

Yes, as written. Check the labels on anything shop-bought, which is where animal products tend to hide.
