This effortless flatbread recipe with no yeast is one of my favourite recipes, not only is it easy to make but it goes well with any stews or soups, dipped in hummus or used as a wrap. They are easy to store and perfect to pop into the freezer to extend the shelf life and use as you need.

A dotted underline means the amount has been rounded to something you can measure.

Method

  1. Step 1

Place all of the ingredients into a mixing bowl and mix together until they form a dough.

  2. Step 2

You are aiming for a soft dough but if you find it too sticky add a little extra flour (400 g) or if it is too dry add a little extra water.

  3. Step 3

Lightly flour (400 g) a work surface and tip the dough onto it.

  4. Step 4

Begin to knead the dough for 5 to 10 minutes until it becomes smooth.

  5. Step 5

Place the kneaded dough back into the bowl and cover with a clean tea towel. Leave to rest for 30 minutes.

  6. Step 6

Divide the dough into 8 for larger flatbread or 12 for slightly smaller.

  7. Step 7

Roll out one at a time on a clean, lightly floured surface. Don't worry if they are not perfect circles.

  8. Step 8

Place a frying pan on a high heat allowing it to become extremely hot. Cook the flatbread for 1 - 2 minutes on each side and repeat the same method with each dough ball.

Questions people ask

How long does no-yeast flatbreads take?

About 50 min from start to finish: 10 min of prep, 12 min of cooking, and 28 min hands-off while it waits. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How many does it serve, and can I change that?

As written it serves 8. Use the scale control on the recipe card to change it: every quantity in the ingredients and inside the method steps updates with it. Seasoning, and anything measured in pinches or splashes, is deliberately left alone.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.

Can I cook it ahead?

This one sits in the batch cooking group, which means it was picked for cooking in quantity rather than eaten straight from the pan. Cool it quickly, and freeze it in the portion sizes you will actually want later.

Is it vegan?

Yes, as written. Check the labels on anything shop-bought, which is where animal products tend to hide.
