Method

  1. Step 1

    Begin by checking and cleaning the mussels (400 g) (See video for reference).

  2. Step 2

    Next, Cut the leek (1) in half and give it a good wash. Then, slice it up as thin as you can. Peel and roughly chop the garlic (2 garlic) and roughly chop the parsley (10 g).

  3. Step 3

    Place a pan over medium heat and add the butter (15 g) and oil. Once the butter melts place in the sliced leeks (1), followed by a pinch of salt. Sweat them down for 3 to 5 minutes until soft. Add in the garlic (2 garlic) and cook for one more minute.

  4. Step 4

    Pour in the wine (120 ml) and bring it to a simmer before adding in the chicken stock (120 ml). Once simmering again, add in the cream (100 ml) and bring that up to a simmer. Grind in some black pepper before placing in the mussels (400 g). Cover with a lid and steam for 3 to 4 minutes. Once all the mussels are open, they are ready to eat. Stir through half of the parsley (10 g).

    Serve in a bowl with crusty bread and enjoy.
