Method
- Step 1
Place 500g of strong bread flour (500 g) into a mixing bowl and make a well in the centre using the back of a spoon.
- Step 2
Add in 7g of fast action yeast (7 g), 30g of sugar, 10g of salt (10 g), 25g of melted butter (25 g) and 300ml of tepid milk (300 ml).
- Step 3
Mix together from the centre of the bowl, gradually drawing in the flour (500 g) from the outside until it forms a dough.
- Step 4
Lightly Flour (500 g) a work surface and tip out the dough. Knead for 10 minutes. Until it looks shiny and smooth.
- Step 5
Place the dough back into the mixing bowl, cover with a clean damp cloth and leave to prove for 1 Hour.
- Step 6
After 1 hour, uncover the dough and press out the air. Divide the dough into 8 equal sized pieces and roll them into balls.
- Step 7
Place the dough balls onto a baking tray lined with parchment paper. Wet your hand and firmly press the dough balls as flat as you can.
- Step 8
Beat 1 egg (1) and brush onto the burger buns. Cover again and leave for 30 minutes.
- Step 9
After 30 minutes, uncover and brush once more with the egg (1). Sprinkle with the seeds of your choice or leave plain if you prefer.
- Step 10
Bake in a preheated oven at 180°C for 20 to 25 minutes or until golden brown.

Questions people ask
How long does burger buns take?
About 3 hours 50 min from start to finish: 15 min of prep, 2 hours 5 min of cooking, and 1 hour 30 min hands-off while it waits. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.
How much does it make?
As written it makes 8 buns. Use the scale control on the recipe card to change it: every quantity in the ingredients and inside the method steps updates with it. Seasoning, and anything measured in pinches or splashes, is deliberately left alone.
Can I see the ingredients in ounces and pints?
Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.
Is it vegetarian?
Yes, as written. If you are cooking for a strict vegetarian, the one to check is the cheese: several hard cheeses are made with animal rennet.
