Method

  1. Step 1

Place the flour (500 g) into a large mixing bowl and add the yeast (7 g) and sugar on one side and the salt (6 g) on the other. Make a well in the centre and pour in the melted butter (25 g) and tepid milk (300 ml). Mix to form a dough.

  2. Step 2

Place the dough onto a floured workbench and knead until it looks shiny and smooth. This will take 5 to 10 minutes. Shape it into a ball and place it back into the mixing bowl, cover it with a clean damp cloth and leave it to rise for 1 hour or until doubled in size.

  3. Step 3

Remove from the bowl and knock out the air, shape it back into a ball and then divide it into 6 equal pieces. Roll each piece into a ball and leave to bench rest for 5 minutes.

  4. Step 4

To shape your hotdog buns, roll each ball into an oval shape and then turn it 90 degrees so the long side faces you. Roll it from the top towards you, pinching it down with your fingertips after each roll until you have a sausage shape. Pinch the seam together and then roll with your hands until it's 6 to 7 inches long. (see video for reference).

  5. Step 5

Place the hotdog buns onto a baking tray lined with parchment paper. Cover with a clean damp cloth and leave to rise for 1 hour.

  6. Step 6

Brush with beaten egg (1) and bake in a preheated oven at 180°C Fan for 25 to 30 minutes until golden brown.

Questions people ask

How long does hot dog buns take?

About 2 hours 55 min from start to finish: 10 min of prep, 40 min of cooking, and 2 hours 5 min hands-off while it waits. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How many does it serve, and can I change that?

As written it serves 6. Use the scale control on the recipe card to change it: every quantity in the ingredients and inside the method steps updates with it. Seasoning, and anything measured in pinches or splashes, is deliberately left alone.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.

Is it vegetarian?

Yes, as written. If you are cooking for a strict vegetarian, the one to check is the cheese: several hard cheeses are made with animal rennet.
