Method

  1. Step 1

To make the truffle mixture, place the cream in a saucepan and place it over low heat. As soon as it simmers, remove it from the heat. Add the chocolate (250 g) and stir until it fully melts under the residual heat. Place in the vanilla extract (1 tsp) and butter (15 g) and stir until the butter melts and the mixture looks glossy.

  2. Step 2

Pour the truffle mixture into a shallow dish or tray and place into the fridge until it sets. This will take roughly 1 hour.

  3. Step 3

Next, portion your truffles using a teaspoon (heaped). You should get 20 to 25 truffles depending on how big you make them. Roll them into the balls and if you find they have melted quite a bit, place them back into the fridge for 10 minutes to firm up a little bit.

  4. Step 4

Roll your truffles in your chosen toppings and enjoy.

  5. Step 5

Tom's Tips: Keep in the refrigerator for up to one week and in the freezer for three months using an airtight container. Take them out of the fridge 1 to 2 hours prior to serving, as chocolate (250 g) truffles are ideally enjoyed at room temperature.

Questions people ask

How long does chocolate truffles take?

About 3 hours 20 min from start to finish: 10 min of prep, 1 hour of cooking, and 2 hours 10 min hands-off while it waits. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How much does it make?

As written it makes 25 truffles. Use the scale control on the recipe card to change it: every quantity in the ingredients and inside the method steps updates with it. Seasoning, and anything measured in pinches or splashes, is deliberately left alone.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.

Can I cook it ahead?

This one sits in the batch cooking group, which means it was picked for cooking in quantity rather than eaten straight from the pan. Cool it quickly, and freeze it in the portion sizes you will actually want later.

Is it vegetarian?

Yes, as written. If you are cooking for a strict vegetarian, the one to check is the cheese: several hard cheeses are made with animal rennet.
