Method
- Step 1
To make the dough, place the yeast (7 g) into the tepid water (325 ml), stir, and leave for 5 minutes to foam up. Place the flour (500 g) and salt (5 g) into a bowl, mix, and make a well in the centre.
- Step 2
Pour the yeast (7 g) mixture into the flour (500 g) and mix to form a dough. Turn out onto a lightly floured work surface and knead the dough until it's smooth and stretchy. This will take 5 to 10 minutes. Roll into a ball and cut into 4 equal portions. Roll each portion into a ball.
- Step 3
At this stage you can freeze the dough in freezer bags, I'm freezing two today and making two. Or place into the fridge (covered) overnight for a slow prove. If using straight away cover with a damp cloth and leave for 1 to 2 hours.
- Step 4
To stretch the pizza base, place the dough ball onto a floured workbench and press it out from the centre to create a saucer, flip it over and do the same again on the other side. Then, pick up the dough and gently stretch it out using your fingers & knuckles to your desired size. now you're ready to add your toppings.
