Method

Prepare the almonds

  1. Step 1

    If your almonds (15 almonds) are already blanched and peeled, you can skip this step.

  2. Step 2

    Place the almonds (15 almonds) into a pan of boiling water.

  3. Step 3

    Boil for 1 minute.

  4. Step 4

    Remove from the heat and immediately transfer the almonds (15 almonds) to a bowl of cold or iced water.

  5. Step 5

    Allow them to cool completely.

  6. Step 6

    Once cool, slip the skins off - the peels should come off easily.

Make the coconut mixture

  1. Step 1

    In a mixing bowl, combine: 125 g desiccated coconut (125 g), 200 g sweetened condensed milk (200 g).

  2. Step 2

    Mix until fully combined and the mixture forms a sticky dough.

Shape the treats

  1. Step 1

    Take a small spoonful of coconut (125 g) mixture and flatten it slightly in your hand.

  2. Step 2

    Place one peeled almond (15 almonds) in the centre.

  3. Step 3

    Roll the mixture around the almond (15 almonds) to form a ball.

  4. Step 4

    Repeat with the remaining mixture.

  5. Step 5

    (Optional: Roll the finished balls in extra desiccated coconut (125 g) for a classic "Raffaello" look.).

Chill & serve

  1. Step 1

    Place the balls in the refrigerator for at least 30 minutes to firm up.

  2. Step 2

    Serve chilled.
