Method

  1. Step 1

Begin by making your coffee (300 ml), mix in the coffee liqueur (90 ml) if using and leave to cool.

  2. Step 2

Separate the egg (4 eggs) whites from the yolks and place each in separate mixing bowls.

  3. Step 3

Beat the egg (4 eggs) whites until stiff peaks and set to the side. In a separate bowl add the caster sugar (100 g) to the egg yolks and whisk until light, fluffy and pale in colour. this will take 3 to 5 minutes.

  4. Step 4

Place the mascarpone into a bowl and soften it using a spoon. This will help it incorporate into the egg (4 eggs) yolk mixture easier.

  5. Step 5

Add the mascarpone to the egg (4 eggs) yolk mixture and using a beater attachment, mix for 2 to 3 minutes until smooth and creamy and then fold in the egg whites.

  6. Step 6

Next, dip the ladyfingers (300 g) into the coffee (300 ml) mixture (Don't allow them to soak for too long) and arrange them in an even layer on the bottom of your chosen dish.

  7. Step 7

Layer up with the mascarpone mixture and fingers until the mixture is fully used up.

  8. Step 8

Finally, dust the top generously with cocoa powder and grate over some chocolate if using.

  9. Step 9

Set in the fridge for 1 to 2 hours before serving. Ideally make it the day before and allow it to set overnight.

Questions people ask

How long does tiramisu take?

About 2 hours 25 min from start to finish: 15 min of prep, 8 min of cooking, and 2 hours 2 min hands-off while it waits. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How much does this make?

The original recipe did not state a yield, so nothing has been invented for it. The scale control on the recipe card multiplies the quantities instead, which is the honest version of the same thing.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.

Is it vegetarian?

Yes, as written. If you are cooking for a strict vegetarian, the one to check is the cheese: several hard cheeses are made with animal rennet.
