Method

  1. Step 1

To make the Yorkshire pudding batter, fill one cup with plain flour (I'm using an average-sized drinking cup) and place it into a mixing bowl. Then fill the same cup with milk and add to the mixing bowl. Then, fill it to the top with eggs and add them to the mixing bowl. Whisk all ingredients together until you have a smooth batter. Cover and place into the fridge while you prepare the rest of the ingredients.

  2. Step 2

Cut the red onion (1 onion) into quarters and remove the skins. Leave the root intact. Then cut each quarter in half again to create wedges.

  3. Step 3

Place a frying pan over medium-high heat and drizzle in 20ml of olive oil (20 ml). Fry the onion (1 onion) wedges until browned on each side. You can add the rosemary (2 sprigs) in here too to flavour the oil if you like. Season with salt and pepper before splashing them with balsamic vinegar and removing from the heat.

  4. Step 4

Wrap your sausages (4 sausages) in the pancetta (12 slices).

  5. Step 5

Preheat the oven to 190°C Fan. Select an oven-proof dish or use a pan suitable for going in the oven. Add enough vegetable oil or fat to cover the bottom by 2mm. Place into the preheated oven for 10 minutes.

  6. Step 6

meanwhile, Take your Yorkshire pudding batter from the fridge, season it with a generous pinch of salt and white pepper (you can use black pepper) and mix it through.

  7. Step 7

Pour the batter into the preheated oven dish/pan and then place the pancetta (12 slices)-wrapped sausage (4 sausages) into the centre and randomly place the balsamic onion (1 onion) wedges around them.

  8. Step 8

Place the toad in the hole into the hot oven and bake for 45 to 50 minutes until the sides have risen, golden and crisp. Serve immediately with gravy and vegetables of your choice.

Questions people ask

How long does toad in the hole take?

About 1 hour 15 min from start to finish, of which 15 min is prep and 1 hour is cooking. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How much does this make?

The original recipe did not state a yield, so nothing has been invented for it. The scale control on the recipe card multiplies the quantities instead, which is the honest version of the same thing.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.
