Low-Calorie Soup Recipe You Can Eat Guilt-Free!
Serves 4
Ingredients
1 x Leek (thinly sliced)
2 x Carrots (small dice)
2 x Garlic Cloves (thinly sliced)
1 x Bell Pepper (small dice)
1 x Courgette (diced)
5 x Spring Onions (thinly sliced)
20ml x Olive Oil
150g x Tomato Passata
Water
Salt & Black Pepper to Taste
Method
Prep the Vegetables
Start by slicing and dicing all your vegetables so they're ready to go.
Build the Flavour Base
Heat the olive oil in a large saucepan over medium heat. Add the leeks and carrots with a generous pinch of salt. Cook for about 5 minutes, stirring occasionally, until softened.
Layer the Aromatics
Add the sliced garlic and cook for another minute until fragrant.
Add Remaining Veggies
Stir in the diced bell pepper and courgette. Pour in the tomato passata and mix well.
Simmer to Perfection
Add enough water to cover the vegetables by roughly 2 inches. Bring to a gentle simmer and cook for around 5 minutes, just until the vegetables are tender but still vibrant.
Finish with Freshness
Stir through about two-thirds of the sliced spring onions, reserving the rest for garnish. Season to taste with salt and black pepper.
Serve & Enjoy
Ladle into bowls and top with the remaining spring onions for a fresh finish.
