The Classic SCHOOL DINNER CAKE You Remember

School Cake

Ingredients

200g Butter or Margarine

200g Castor Sugar

200g Self Raising Flour

1 tsp Vanilla Essence

4 x Medium Eggs

Topping

250g x Icing Sugar

Sprinkles

2.5x  tbsp water

Method

Preheat the oven to 170°C Fan and grease and line a baking tin with parchment paper.

Cream the butter and sugar together until light and fluffy. Add in one egg at a time and beat them in until fully incorporated. Mix through the vanilla extract.

Sift in the flour and fold it into the mix in 4 stages.

Place the batter into your baking tin and bake for 45 to 50 minutes until a skewer comes out clean. Leave to cool in the tin.

Mix the icing sugar with the water, a little at a time until you have a spreadable, smooth icing that’s not too runny. You might not need all of the water.

Pour it over the cake while still in the tin, spread it out evenly and then add lots of sprinkles.

Wait for the icing to set before cutting into portions and serving.
