One Waffle Recipe, Unlimited Possibilities


Makes 6 Waffles


Ingredients


Waffle Batter


270g x Plain/All-Purpose Flour

50g x Caster Sugar

8g x Baking Powder

14/tsp x Salt

480ml x Milk

100g x Unsalted Butter (Melted)

2 x Large Eggs (Separated)

1tsp x Vanilla Bean Paste or Vanilla Extract


Method


  1. Place the flour, caster sugar, baking powder, salt, milk, melted butter, egg yolks, and vanilla into a mixing bowl. Whisk until you can't see any dry flour. In a separate bowl, whisk the egg whites to stiff peaks. Fold the egg whites through the batter until fully incorporated. 


Separate the batter into three bowls for our three different flavours.



Banoffee Waffles 


You will need


1/3 x Waffle Batter

1 x Banana (sliced)

1 scoop of vanilla Ice cream

Salted Caramel Sauce


Ingredients for the Salted Caramel Sauce


50g x Caster Sugar

15g x Unsalted Butter

65ml x Double/Heavy Cream

Pinch of Salt

Dark Chocolate to garnish (optional)


Method


  1. To make the Salted Caramel, place the caster sugar into a saucepan over low heat. Melt the sugar until it reaches an amber colour, pour in the cream and add the butter. Stir until you have a smooth sauce. Mix in a pinch of salt. 


  1. To assemble the banoffee waffles, cook your waffles in a preheated waffle iron until golden and crisp. Create an even layer of sliced banana on top of your waffles and, place a scoop of ice cream in the centre. Drizzle with salted caramel and a grate of some of the dark chocolate. Enjoy!



Blueberry, Lemon Drizzle Waffles


You will need


1/3 x Waffle Batter

1 x Lemon (Zest Only)

70g x Fresh Blueberries ( Plus extra for topping)

Candied Lemon Zest

Lemon Drizzle


Ingredients for Candied Lemon Zest


1 x Lemon (Rind Only)

Water for Boiling

50g x Caster Sugar (Plus extra for coating)

60ml x Water


Ingredients for the Lemon Drizzle


Remaining Sugar Syrup

Juice of One Lemon

70g x Icing Sugar



Method


  1. Place the zest of one lemon into the waffle batter and add in the blueberries. Mix until fully incorporated. 


  1. To make the candied lemon zest, peel the rind from the lemon using a peeler. Remove any white pith using a paring knife (see video for reference) and cut the lemon peel into thin strips.


  1. Place a saucepan half-filled with water over high heat and bring to a boil. Place in the lemon rind strip and boil for 30 seconds to 1 minute. Remove the lemon rind and empty the water out of the pan. Place it back over the heat and add in the caster sugar and 60ml of water. Once the sugar has dissolved place the cooked lemon rind back into the pan. Cook in the sugar syrup for 5 minutes. 


  1. Strain through a sieve and save the syrup for our drizzle. Toss the lemon zest in a little caster sugar until coated. 


  1. To make the lemon drizzle, squeeze the juice of one lemon into the remaining sugar syrup (saved from making the candied lemon zest) and add in the icing sugar. Mix until smooth. 


  1. To assemble, cook the lemon and blueberry waffles until golden and crisp and top them with fresh blueberries, spoon over the lemon drizzle and finish with a pile of candied lemon zest. Enjoy!



Chocolate & Raspberry Waffles


You will need


1/3 x Waffle Batter

20g x Cocoa Powder

Raspberry Coulis

Fresh Raspberries for Topping

1 Scoop x Vanilla Ice Cream

50g x Dark Chocolate Chunks


Ingredients for Raspberry Coulis


100g x Raspberries

Juice of 1 Lemon

20ml x Water

20g x Caster Sugar


Method


  1. Add the cocoa powder to the waffle batter and mix until fully incorporated. Set to one side. 


  1. To make the raspberry coulis, place the raspberries, lemon juice, water and caster sugar into a saucepan, bring to a simmer and cook until the raspberries break down completely over medium heat. 


  1. Remove from the heat and pass through a sieve. Sweeten with caster sugar or icing sugar if needed. 


  1. To assemble, cook your chocolate waffles until crisp. Scatter with fresh raspberries and place a scoop of vanilla ice cream in the centre. Drizzle with raspberry coulis and finish with a good handful of chocolate chunks. Enjoy!
